Sherry cask scotches are popular among the Highlands with distilleries like Glenfarclas also using the fortified wine casks. Highland Park usually peat their whiskies but are not on the same level of smokiness that you’d find with a lot of Islay options. Smell: Straight away, the peat seems more intense than other Highland Park expressions. Not quite Islay peat, but more than you’d expect. There’s sherry too, with raisins and sultanas. Toffee and heather honey. Apple. Lemon. Straw. Sea salt and pepper. Charcoal. The passion and skills of the brand ensures the Highland Park whiskey stands apart. They range whiskey aged from 10 to 50 years. Dragon Legend, despite sounding like it was named by an over-eager adolescent that enjoys tabletop role-playing games, is a rather satisfying dram that I have been enjoying more than I expected to. It’s more in-your-face than the core range but that isn’t necessarily a bad thing and there remains enough of a recognisable trace of the distillery character to please diehards. The cool weather condition of the Island is favorable for even the maturation of the whiskey. The company utilizes the method of cask harmonization to provide intense balanced whiskey.

The company still uses the process of turning malt by hand. Their hard work and effort in every grain results in delivering the aromatic smokiness. The signature character of the brand is the infuse heathery aromatic smoky flavor. This character of the whiskey is added by the burning of peats. The peats are carefully selected and dried in summer. The nose carries deep sherry, dried fruits and a bit of melon aromas. The peat is overpowered by the sherry cask notes however. For those that are put off by very smoked fragrances this is quite welcoming option. The traditional method of maturation gives a unique character to it. They offer a huge range of whiskey to explore. You can get a range of whiskey that has matured for over 50years. Consumption of whiskey helps in reducing stress. There's a very little amount of sodium and no fat. To say that Highland Park has been prolific over the last 12 months is rather the understatement. A veritable glut of new bottlings, from single casks, limited editions, travel exclusives and core range rebrands have been released with something to satisfy even the most hardened of HP enthusiast. In that regard, Highland Park Dragon Legend is rather the oddity as it seems to have sneaked out of Orkney with scarcely a whisper. Nose: The sweet meets the peat as was promised. Honey, golden syrup, salted caramel and an assortment of dried fruits provide a warm sugary introduction. This is followed by the traditional aromatic, floral HP peat, which is indeed upped a notch for this release. It’s quite ashy and is supported by some damp earthy hay-like malts which provide depth. Light citrus, apple peels and a healthy dose of oranges make for rather the fruit orchard. Both smoke and sweetness are enhanced after a short period of resting. The addition of water is interesting – immediate orange barley water with a hint of ginger!
